Many traditional cuisines and mass marketed food products are way sweeter, saltier and fattier than they really need to be. We wondered why and decided to try and do better. We deconstructed our favorite foods and flavors and reimagined them using all natural, sustainable ingredients like fruits, vegetables, grains, legumes, herbs, spices, aromatics and liquids that are either fresh, shelf-stable, frozen, dried, aseptic, distilled, blackened or fermented. We also greatly reduced or eliminated salt, sugar, carbs and fat. And we discovered something really interesting – fat coats the tongue and salt and sugar mute the palate, so when reduced, flavors become richer, brighter and more intense.
Once we capture a flavor profile we love, whether it is a fish stew from Nigeria, a cherry cola soda, pepperoni, foie gras, gummi bears or something we totally dreamed up, we deploy the flavor in a variety of foods, from dips and sauces to oat snacks and smoothies to plant based sausages.
Thus we offer to you, dear consumer of condiments, sauces, drinks and snacks, entire families of tremendous flavor – super delicious, postmodern foods and beverages that manifest the spirit of the original (some more so than others – whilst we consider ourselves non-traditional traditionalists we also dabble in being non-traditional non-traditionalists) while embracing being as good for you as possible.

For function and pleasure - salt preserves foods, your body converts sugar into energy and fat feeds your brain, and all three enhance flavor so you enjoy fueling up. Back when cultures were hunting and gathering, they would burn through energy and calories like crazy. But today, many people around the world are just sitting at desks, yet still consuming foods designed over centuries for high activity. And on top of that, non-traditional foods that are cheap and easily accessible are even worse for health (see below). We believe culture is a constraint on creativity. There is no one single "right" version of any dish. So why not try to make it healthier?
Together, salt, sugar and fat are super satisfying and do all kinds of crazy things to your brain. So by boosting salt, sugar and fat in a highly processed form, manufacturers create super satisfying, cheap-to-make products that need less additional flavors to be made enjoyable to eat. Our products can have several dozen ingredients which provide a more nuanced and complex flavor experience.
